1997 BLUE TOOTH CABERNET SAUVIGNON

You can never have too much of a good thing!

The typical fruits from Blue Tooth Vineyard are bright ripe plump cherry fruits coupled with dusty earthy notes. The fruit characters clearly represent the two varietal components used to make this wine. The Cabernet Sauvignon provides the backbone of ripe black bing cherries, while the earthy notes reflect the Merlot portion adding a layer of complexity and richness similar to the Margaux region of Bordeaux.

Blue Tooth Vineyard borders the famous Stags Leap District and shares many of its unique attributes. Oak Knoll appellation has a westerly aspect, excellent drainage, a rock base with sandy gravel topsoil, undulating hills and historically was also once the bed of the Napa River.

Yield:

Removal of fruit at verasion resulted in a low 2 ton per acre.

Vineyard Data:

Vertical trellis with de-leafing around the clusters for color and flavor.

Yeast:

30% wild yeast, 70% cultivated Rhone Valley yeast.

Time on Skins:

24 days on skins, 100% co-fermentation of varieties

Fermentation Type:

48 hr cold soak, 100% Whole berry

Cooperage:

50% New oak, 50%% 1-2 year old blend of French oak.

Cepage:

Cabernet Sauvignion 84%, Merlot 16%.

Clarification:

lightly fined, unfiltered.

Winemakers Notes: A wine of elegance and finesse, with deep ruby color and supple tannins. Aromas include a rich bouguet of mineral scents, cigar box, ripe currants and plum fruits.
