2001 CABERNET SAUVIGNON

Back by popular demand!

After 7 years of customer requests for this wine, I have finally faced the music. The Ramspeck Cabernet is back. 65% is a product of the original Napa Valley vineyards; the balance comes from Sonoma's Alexander and Dry Creek Valleys. I looked to Sonoma for exceptional grapes which would add berry character and reduce my dependence on Napa Valley...an addiction I've had for many, many years now.

On reintroduction today the '01 Ramspeck Cabernet is a high caliber wine exceeding the quality parameters set by its historic releases. The focus continues to be on attention to fruit character, intensity and depth. Its ultimate success was achieved by careful selection of quality fruit, the Cépage, and 22 years of practice.

Vertical trellis with leafing around clusters for extra color & flavor
Yeast:
20% wild yeast, 80% cultivated Rhone Valley yeast

Time on Skins:

28 days on skins.

Fermentation Type:

48 hour cold soak, 100% Whole berry co-fermentation of varietes.

Cooperage:

50% New oak, 50% 1-2y.o. blend of French and American oak.

Cepage:

Cabernet Sauvignion 75%, Cabernet Franc 15%, Merlot 10%.
