1992 CABERNET BLEND

A Secret Treasure: Miam! Miam!

The scent of soft luscious ripe black cherries.....a gift wrapped in the aromatic spice of a leather-lined cigar box. A secret treasure, punctuated by the floral delight of a sweet scented perfume that wafts of a grand old country flower arrangement. A vibrant bouquet of violets and roses interwoven by an earthy potpourri of alpine spice.

Yield:

removing of poorly colored fruit at verasion resulted in a low 2.75 ton per acre.

Vineyard Location:

Calistoga Foothills 48%, Atlas Peak 18%, Coombsville 15%, Mayacamus Ranges 19%.

Vineyard Data:

vertical trellis with deleafing around the clusters for extra color and flavor.

Time on Skins:

25% extended maceration 24 days on skins.

Fermentation Type:

48hr cold soak, 100% Whole berry, 25% barrel fermentation, open top, co-fermentation of varieties.

Yeast:

30% wild yeast during cold soak, 70% cultivated Rhone Valley yeast.

Cooperage:

50% New oak, 50% 1-2y.o. blend of French and American oak.

Cepage:

Cabernet Sauvignion 66%, Cabernet Franc 15%, Merlot 19%.

Clarification:

lightly fined, unfiltered.
