1993 CABERNET SAUVIGNON

Herbes de Provence!

An aromatic infusion of fresh ripe blueberries and briery blackberries. The floral delight of violets enriched by the subtle nuance of Jamaican-all spice, punctuated by the intensity of fresh roasted French coffee.

Notes and Stats

Yield:

removing of poorly colored fruit at verasion resulted in a low 2.75 ton per acre.

Vineyard Location:

Coombsville 35%, Atlas Peak 28%, Oak Knoll 18%, Calistoga 13%, Mayacamas Ranges 6%.

Vineyard Data:

vertical trellis with deleafing around the clusters for extra color and flavor.

Time on Skins:

25% extended maceration, 21 days on skins.

Fermentation Type:

36hr cold soak, 100% Whole berry, 25% barrel fermentation, 100% co-fermentation of varieties.

Yeast:

20% wild yeast during cold soak, 80% cultivated Rhone Valley yeast.

Cooperage:

50% New oak, 50% 1-2y.o. blend of French and American oak.

Cepage:

Cabernet Sauvignion 82%, Cabernet Franc 9%, Merlot 9%..

Clarification:

lightly fined, unfiltered.
