1993 PINOT NOIR

A twelve hour shift isn't so bad.

AAAAUGH! But the alarm is so early and sleeping on the couch for three hours is so... well, unnatural. If Ramspeck is going to exemplify the advanced Burgundian techniques of a winemaker like Guy Accad, then you've got to follow through on the details.

Details like cold maceration prefermentation; Pinot Noir is a difficult grape - the best color and superior flavors come from the perfectly hand-selected clusters harvested cold and held for 10 to 14 days.

Trubody Lane 68%, Oak Knoll 9%, Atlas Peak 8%, Spring Mountain 5%.

Harvested:

5:45 a.m August 27th 1993 @48F.

Time on Skins:

Carbonic Maceration 10 days, 21 days total.

Fermentation Type:

100% Whole clusters, no destemming, open top fermentor.

Yeast:

30% wild yeast, 70% cultivated Rhone Valley yeast.

Cooperage:

100% French oak 1 year old.

Clarification:

lightly fined, unfiltered.
