1995 CABERNET SAUVIGNON

Big is Beautiful!

Yes, you’ve heard it, but your wondering.., wondering if it’s time? Here is the answer to your fantasies! A superb ending to the ‘95 season.. .a season characterized by warm days, cool nights and low yields.

Yes, there is no essence of violets, tulips or snickers bars. But this is meat n’ potatoes topped with truffles. It’s a conglomeration of ripe black fruits followed by excellent weight, length and structure.

Yield:

removing of poorly colored fruit at verasion resulted in a low 2.5 ton per acre.

Coombsville 48%, Oak Knoll 32%, Atlas Peak 20%

Vineyard Data:

vertical trellis with deleafing around the clusters for extra color and flavor.

Time on Skins:

24 days on skins.

Fermentation Type:

48hr cold soak, 100% Whole berry with 100% co-fermentation of varietes.

Yeast:

30% wild yeast during cold soak, 70% cultivated Rhone Valley yeast.

Cooperage:

50% New oak, 50% 1-2y.o. blend of French and American oak.

Cepage:

Cabernet Sauvignion 78%, Cabernet Franc 11%, Merlot 11%.

Clarification:

lightly fined, unfiltered.
